A couple of years ago, I had pretty much given up on making Pav bhaji, since it never turned out good. I kept following all recipes but I would never got the desired taste. My frustration grew because if you think about it, its not such a difficult dish to make!
Recently while conversing with a friend, I figured what I was doing wrong – I used too much potato! Potato soaks up water and made the dish very dry. The trick with Pav bhaji is to make it not too dry and not with too much curry, just the right consistency.
Yesterday was the eureka moment for me when my Pav bhaji turned out not only good but quite delicious! I used the Badshah Pav Bhaji masala and for veggies I used – potatoes, peas, zucchini, green bell pepper, beans and cauliflower.
Serve this dish with warm burger buns and optionally grated radish, which enhances the taste.
