I was running out of school lunch options for my daughter and recently ran into a Thai Red Curry Sauce in Trader Joe’s.
It’s pretty easy to make and turned out quite zesty. I sauteed a mix of sweet peppers for a couple of minutes, added cubed tofu and mixed with half the bottle of the Red Curry sauce. Let it simmer for few minutes and then mix in coconut milk, salt and red pepper. Let it simmer for another ten minutes and serve with steamed rice.
In all these years, this is the first time that my daughter texted me from school that she liked her lunch! I guess it’s worth trying.
